Sam Egerton, Group Bars Manager of Merivale, adds a little spice to the long weekend with the perfect drink to your liven up your staycation. “The Spicy Watermelon Margarita was a recent addition to the menu at Totti’s in Bondi and has proven to be an absolute winner for those getting Totti’s to go. The recipe below is a simple way to make an at-home version – or otherwise just jump online and they’ll do all the work for you!”

SERVES 1

*OR MULTIPLY THE RECIPE BY THE NUMBER OF DRINKS REQUIRED

INGREDIENTS

45ml Altos Blanco
30ml Watermelon Juice (or Three Chunks)
20ml Lime Juice
10ml Simple Syrup (equal parts water and castor sugar)
1cm fresh chilli (the smaller the chilli the spicier)

METHOD

Add all ingredients to a mixing glass, mason jar or sealable container with ice. Shake while listening to your favourite work out tune and then pour into a rocks glass (or strain into a wine/cocktail glass). Garnish with a sprig of basil

Originally from Christchurch, New Zealand, Sam moved to Sydney 14 years ago and has been working for Merivale for the last 9. Having been involved in hospitality since he was 16, he has experienced all manner of the food and beverage industry. At Merivale he was an integral part of the Palmer & Co. team which was awarded 21st Best Bar in the World in 2012. He opened Charlie Parker’s in 2016 which went on to win ‘Cocktail bar of the Year’ at the ALIAs and ‘Sustainable Bar of the Year’ at the Australian Bar Awards in 2017. That same year he was named 7th in the Australian Bartender Magazine’s Most Influential List, and 6th in 2019. Taking a step back from Operations, Sam currently works as Merivale’s Group Bars Manager where he oversees front line performance, focusing on people, product, service and growth.
